Landed at LHR on Sunday just gone and swear I saw a United A320/1 parked on a stand. Thought it must be a charter but then saw another. Is this normal? What route is it flying?

One would imagine you've actually seen some 757's, which make daily appearances.

Strongly suspect you saw one of their B757s.

The landing gear looked to have only a single bogie wheel arrangement so I'm stumped now cause I know the 75 is double bogie.

United only have the A319 and A320 neither of which are LR versions. Furthermore, a quick look at FR24 last Sunday did not show up any UAL A319/320 flights. Perhaps a little too much vino? ;) (just kidding).

Which terminal was it on stand at?

Is it possible you saw Air Astana? They have a dark blue tail with a gold and white design which seen from a distance or out the corner of your eye may resemble UA?

They normally also use a 757 but it's possible they swapped it for an A320 one day?
