Hey there,

I have the right to work in Europe (French passport), and speak French and Italian.
Have a 1900, Saab 340, and 737 Pic type ratings.
About 8000 hours, 2600 Turb Pic (1900 and Saab) about 4000 on 737 Sic only.

Provided I do a JAA conversion, where do you all think I could land a job? I just don't know where to look, really. Would prefer Italy basing.

Ryanair direct entry Captain? They have many many bases in Italy (that nobody else wants to go to!)

It all depends where you want to live - Ryanair has the greatest base geography so far and the biggest fleet. Easyjet is not far off, and Norwegian is catching up nicely. By looking at your stats, I see that you do not have any PIC on 737, that will prevent you from joining direct entry captain position on 737. One of the options is to go to the right seat and get your Command Upgrade - with your qualification it should take less than a year...You can try turboprops though, but there aren't many jobs out there for turboprops in Europe...

4000 on 737 Sic only It's common for FAA certificate holders to claim their PF time as PIC time, so this would give you 2000 hrs PIC B737.

No it isn't, in fact it's expressly forbidden. Trust me, it's been a nightmare for me having to keep two different logbooks, one EASA and one FAA.
