Where do Airlines put their crews on layover here in Hong Kong

It doesn't matter where other crews stay, take 5 mins and do your own search............heaps of good places in HK.

Not sure if any airline uses these, but a couple of suitable ones in Wan Chai are Ming Court & The Beverley Hotel. Good location: close to shops, transport, food and entertainment.

Cheap too.....Soon to be out of business or struggling LCCs will find it very appealing.. Room service can be a gotcha though!!

I just assumed that all airlines kept their crews at the Regal which is attached to the terminal by a walkway.

That's where I stayed. Nice place.
