Being an information and BOOK junkie, I was wandering if anyone has ever come accross a book/s or encyclopedia set that covers ALL aspects of aviation, and not just the stuff needed for the exams?

Van Sickles Airmanship is great:

In a nutshell, no.

I have two offices and a home library, with between them perhaps 40ft of bookshelves allocated to aviaton subjects, the vast majority of that technical. I still buy additional books!

What aspects do you want books on? I can certainly recommend good books on most aviation subjects (and a few I'd steer clear of).

I too have a stack of book, but was wandering if anyone had compiled everything into one... a sort of WIKIPEDIA on paper. Most of the books compiled are edited to exclude a lot of "useless" information or designed for student pilots to study for the exams where only the neccessary is in. I was hoping and looking for a complete work...:8

My 40ft of shelfspace isn't complete, and not much of it is repetition.

What do you want to study? I can certainly suggest a reading list.
