“TWY J has below Code E wingtip clearances for Code E ACFT allocated stands 123
and 125.”

Where can I find the definition/max wing span of a Code E aircraft?

"Aerodrome Reference Code"

You will find a table in Jeppesen suplementary-Navigation Charts(Chart Glossary),Page 1.

Code element 1 & 2,This case,Code Element 2 where E would be,Wingspan 52m up to but not encluding 65m and Outer Main Gear Wheel Span 9m up to but not including 14m.
