does anyone know who is operating the Formula 1 cargo flights from Munich and Stanstead down to Australia this year, and when the first flights leave? I guess they will be leaving towards the end of this week?

For the past two years CV / Cargolux did the MUC-SIN-MEL with the cars.

Ada, DHL does the logistics for F1 but don't do the actual flying of the cars. As others have said, CV, SQ etc will get that work.

Related question, who is flying F1 from Shanghai to Bahrain ? Tight schedule, 3 days to pack, fly and unpack...

surely no tighter that Melbourne to Malaysia? Will be tighter this year as the race in Australia is so much later in the day

Do they usually carry only the cars and equipment, or does normal freight get carried on these flights?

Only F1 material is on these designated flights on Cargolux.

I believe thats stipulated in the contract!

DHL does not have any involvement in the arrangements btw!
