What is a normal roster for a HKG based FO on the 744 pax days off between trips also how many nights on a stopover do you get.

Why? think you can join direct entry FO on the 400 Pax fleet do you?
If you are thinking of joining CX in HK then you should be more interested in the SO roster.

The HKG based 744 FO roster is the best in the company. Typically you get one or two trips a month (which you can request using the company's highly regarded request system) followed by at least a week off. Down route you will stay in a 5 star hotel with a minimum of 72 hours off. To top it off you will not be rostered to fly in your circadian low, or be subject to high doses of solar radiation. This is truely a career airline and one that is sympathetic to your well being.

Have quick look at the bus roster before you get to pissy. The term "as good as it gets" comes to mind.

you forgot to mention that Relief FO Recency requirements are of paramount concern within the company, and you get so many sectors, that you just can't give them away.
