With reference to yesterday's crash involving Flight 1549 how woul;d the flightcrew set the flaps etc and speed to land on water instead of a runway?

Max flap, wheels up, absolute minimum speed, minimum ROD, along the wave line, not against it, above all, don't dig a wingtip in. From many years ditching training VC10.
Despite what all the publicity is saying, the engines are designed to shear off quickly, and stuctural integrity should be maintained. Many aeroplanes have come down in water and you would expect to float and have plenty of time for an orderly evacuation. Some aeroplanes have even flown again (Japan AirLines DC8) after ditching. The verdict for the VC10 was that it would survive, even in Atlantic swells, with the right technique.
