I have just seen what I think, after a bit of Googling, is a Grumman F9F-2 "Panther" flying over the Thurrock area, pulling nice tight turn back in the direction of Southend.

My curiosity is piqued, can anyone tell me what it actually was?

I doubt it. Perhaps you saw a Hunter

Or more likely a Jet Provost:

My sophisticated aircraft recognition drill was to google for early jet fighter and switch to image search, it got me to the shape :-)

No Panther, or Cougar for that matter, flying anywhere in the world, sadly.
