Do freighter F/Os hired after Jan 1, 08 who are on "Unified" pay scales fly passenger aircraft as well?

yes. Unified Pay scale (COS '08) are no longer freighter FOs. Just FOs.
But the guys hired before that date (COS 99) cannot fly pax planes until their 3 years are up.

What actually happens depends on your base/type.
All the freighters are B744, and if you fly the jumbo you will fly freight (almost?) exclusively. If you get the 777 or bus, you don't have to worry.

Interesting. But does a Unified jumbo F/O trigger bypass pay???? That is the question!

Yes they do. See latest incoming correspondence on the AOA website for the details.

I am a little bit behind...
Is it true that Europe based FO's have to pay their taxes according to job base country rules? And: the published unified pay scale is about gross salary?
I have my first interview in Paris on june 10.
