The bride is travelling to hobart with VB tomorrow and I was surprised to see that scheduled flight time is 1 hr 15 min. Given that Hobart is relatively close to Melb, why does it take this long?

Direct flight time today at typical jet speeds and flight level would be approx 52 mins. add to that some manoeuvring time, around 10 mins taxi time at each end and you easily reach 1h15m.
Remember the "flight time" used by an airline in schedules that punters see is from the gate at departure to the gate at destination... not just the airborne time.
