I'm a french pilot, 38 years old, holding a CAA and FAA CPL IR MULTI, with 250 hours total flight, and I'm looking for a flight school which allows to pas the instructor rating in a english speaking country where ever in the world, with a possibility to get hired as foreign instructor.

As far as I'm aware, there's no such thing. Each country will require you to have obtained and instructor rating in that country. How that rating is obtained will vary from country to country and you would need to make individual enquiries.

Some countries do accept the FAA rating, others will accept JAA but you'd need to check.
