Can anyone advise what ATC frequency/frequencies are used by high level traffic overflying YSSY such as NZAA-WSSS and KLAX or PHNL-YMML?

The Brisbane Centre frequency one first makes contact with at 200 miles Sy is 128.60

Sydney TMA owns up to FL280.

Above that it is a myriad of sectors, 4 Brisbane Sectors and 3 Melbourne Sectors meet at the Sydney Cap; a 15NM ARC centred on the SY VOR.

The CAP is owned by one of the Melbourne Sectors, 125.0 (the one with naturally less workload than the others). As it's only 30NM (or about 4 Minutes) across sometimes aircraft will miss 125.0 and go from a BN sector to another ML Sector, or BN to BN Sector; it's all coordinated and arranged off the air (obviously).

The Enroute Chart (ERC) (H) is designed to provide selected information similar to that of the ERC (L) series and is primarily for use by aircraft operating on transcontinental and intercapital routes at FL2000 and above. I'd have thought only one launch-able vehicle regularly uses that airspace.:}
