Traffic load is all passengers, baggage, mail and freight. Basically anything that travels in the cabin or hold, that isn't operationally essential (ie, crew and galley fittings etc).

Came across this site http://www.wiljam.com/Wiljam%20complete/031%20Mass%20and%20Balance/Contents%20Mass%20and%20Balance.pdf
Notes aren't great but better than you have (nothing)

Hi there,
Got JAA's on Monday so I'll chip in.
In addition to what Maude Charlee posted which is your actual traffic load, your Allowed Traffic Load = Proposed Take-Off Mass - Dry Operating Mass - Take Off Fuel
Proposed Take Off Mass is calculated based on the lowest of
MSLM (or Performance Limited Landing Mass) + Trip Fuel
MSTOM (or Performance Limited Take Off Mass)
MSZFM + Take Off Fuel
Hope this helps further,

"Payload" was always a better term than "Traffic Load". Described where the money came from!
