Would just like to know what is involved in converting an Australian CPL to HKCAD standards. How many exams and what subjects?

It is determined on an individual basis by the CAD. You submit your experience, usually through the host company, and the CAD will send you a letter letting you know what exams you will have to sit. I just got my letter a few weeks ago...need to take 5 exams: Aviation Law A + B, Human Performance, Aircraft Technical and Performance, Performance-transport. I have >6000TT and >4500 PIC Jet (Mostly CRJ) some SIC Heavy jet <200

Does anyone have info on the different aircraft specs that Cathay operates?

I have an interview on the 22ND of Sept and have gotten info on the tech. test but I am looking to increase my knowledge base on the different type of aircrafts Cathay operates.
