I usually take major US carriers to Asia, but a travel agent suggests EVA Airways and Far Eastern Air to save money. I've never heard of them, let alone flown them. Any views?

Try them. You'll probably never fly a US carrier again! EVA is an excellent carrier. The sum of the ages of an EVA 747 full of FAs is probably about equal to the age of one US carrier FA on Asian routes. ;)
Or, since I'm guessing that you want to get to Kaoshiung, try Cathay Pacific + Dragonair. Which would be even better than EVA.
