How does one go about proving VAT has been paid on an aircraft owned for over 10 years, when I do not have the origianl pauchase invoice? Aircraft imported new 25 years ago.

even if you find the original invoice, it will not give the confirmation that V.A.T. tax was paid.
You should ask to the company which customs cleared your aircraft 25 years ago when it was imported.
No idea about how long they must keep in their records the imports paperwork, but the V.A.T. must have been paid by the freight forwarding agent or any other company dealing with import/export issues, and you probably paid the V.A.T to them.
Here in France, you receive a paper called IM4 which shows the V.A.T. amount and all other relevant taxes/duties.
This paper is issued by the company in charge of the customs clearance and stamped by the customs.
