Has the RNZAF chosen or shortlisted the replacement helicopters
for the Sioux and Huey fleets?

Not even a shortlist yet just an acknowledgement that it has to be done and soon. The Sioux are very long in the tooth and the Hueys are also very tired.
Big issue is cost, and given that Australia has already cut a deal for the Eurotiger and has long completed its Blackhawk/Seahawk buy, the Kiwis can't piggyback on someone else's deal.
And unlike the the tragedy with the A4s, this is not a capability they can do without
