Hi all,
Can anyone recommend any VOR, DME, NDB videos or even books which explains how to operate them in a light single engine aircraft?

Trevor Thom volume three (PPL course) has loads of stuff about VOR and NDB navigation. Could be what you are after, and it is all intended for single engine PPL operations.

Highly recommended: CockPIT: Pilot Training Software.
It comes with a pilot training manual explaining the theory. The software includes a simulator, interactive exercises and a weight and balance and navlog calculator.
It's really great and saved me a lot a flying time and money!
