Nephew's son works at Aldi - he has to do every job in the shop.
I would guess that they staff for the average shop workload, and move staff around as the priorities in store change, from stocking shelves, unpacking in the warehouse section, checking pricing and sell-by dates, running the tills and self-service checkouts etc. During busy times they may well not have enough staff in store for part of the time, even allowing for multi-tasking, but they are trading off an inconvenience for some customers for a time against their low prices.
