Ok, I'm Spanish so I think I can help you with this one.
Learning Spanish would be a great advantage, mainly because the majority of the FTO's operate in Spanish, with the rare exceptions of Adventia in Salamanca (
www.adventia.org), Flight Training Europe in Jerez (
www.flighttrainingeurope.com) and Airmed in Valencia (
www.airmed.es), being the first two the best of all training organisations here.
Now, about the FI job prospects... I don't think there are as many opportunities here as in the UK. I am a FI(R) pilot and I'm considering very seriously moving to the UK to try to find some sort of job instructing, no matter where.
