Well destinations depends on seasons and aircraft types.
A330 (out of Sydney) = Bali, Jakarta, Manila, Singapore, Seoul, Hanada, Bangalore, Auckland
B787 (out of Sydney) = Los Angeles, Vancouver,
Johannesburg, Dallas Fort Worth
A380 (out of Sydney) Dallas Fort Worth, Los Angeles, Singapore
You can count Europe out, these will be operated by UK crew by the time you start flying.
If you wanna go Rome and Paris out of Sydney you might need to wait for few years when project sunrise commences.
I don't do these long flights, on these wide bodied aircrafts there are dedicated crew rests (flat beds, except A330) so it's not like you will be up and flying whole 12+ hours.
You will get 1st and 2nd breaks, all up about 4-6 hours, so you will get a chance to have a sleep/rest during the flight.
You either will feel very tired or energised when you first start flying because its all new and exciting but eventually it will be repetitive and you just wanna stay in hotel room and rest, all comes down to the individuals. Everybody handles fatigue differently.
