I don't understand why the EASA listed 32/33 applicants are rushing to have their UK ATOs approved by EASA after the 31st December
Quite simply because from 1 Jan 2021, unless they are approved by EASA or one of the EU member states, they will not be able to provide training for the issue, revalidation or renewal of an EASA licence, rating or certificate.
