Personal opinion but they seem the most logical fit until EZY open a base, and SOU have confirmed that they are in discussions in respect of this route (BI an outside bet). Hop of course use to operate the CDG route in one of their previous guises Brit Air, and did so for a while in competition with BE. That was with the CRJ as well, which isn't the best from SOU and they were also moving to the 700/900 models which cannot operate from SOU as far as I know. They now have E170/190s which would be able to operate from SOU, and now with no competition. They operate to ABZ which is another AGS airport and with similar annual passengers on the route.
