Did FDX video a UAP in March or is this a hoax?

With all the recent UAP news, it's really hard to tell what is real, however, the following report claims to document a 30 minute encounter that includes a 4 minute video. The video appears to show a bright pulsing light keeping station 1000-2000 feet to port while PT and FO talk throughout, mentioning the lack of TCAS and nav lights. Most interesting is a fast pan to the MFD to demonstrate lack of TCAS at the very end and Spanish atc chatter in the background around 3.15 .

My gut instinct is that anything can be photoshoped... but this sure looks like a 767 flight deck and its hard to imagine that anyone with flightdeck access would fake a UAP. On the other hand, I could be missing obvious clues and would appreciate a look over from all of you Boeing drivers.

Report claims this is a 763 out of Quearetaro at 8.05 bound for Memphis on March 19th. I'm assuming FDX based on time, equipment and route.
