MCAS will only trim again if it is reset. One of the reset triggers is using the electric trim, so if the pilots don't re-trim the aircraft, MCAS will not trim again.
IMHO the only reason the Lion crash happened after being somewhat controllable for 10 minutes, is that the captain who had re-trimmed to neutral over 15 times (I think), handed over control to the FO, who also retrimmed, but much smaller inputs, letting MCAS run the trim full AND.
