After that, what A/C would be better to gain experience and hours in to get into charter flying either in Perth or Down South/ Up North? An Airvan or C210 or both?

If you get a job with Trevor at Wrightsair, you'll get to fly both C210 and Airvan. Plus possibly Aerostar, a bit later on?
