B787-9 demo film

While most maneuvers seem pretty standard, the climb gradient seems to be close to fighter plane pitch. Hard to tell fully exactly the pitch-up angle due to unknown positioning of the camera crew, and surely the plane was very light, but wow.

close to 30 deg climb, according to the official Boeing commentary here. Later a 60 deg bank.

I'm not quite sure what you're trying to say. It is after all not uncommon for new airliners to be seen making exaggerated manoeuvres, in comparisson to normal passenger operations, when making demonstration flights at air shows. Check out some archive Farnborough footage for proof. Impressive nevertheless of course.
