Emma, expect around 1-2 months between the interview and the simride.
Simride depends on the aircraft u'll be flying. Simcheck held in London Heathrow for the Airbus, ATR in Bangkok most problably....

Bonding arrangements are for a 4 year period. What I heard they're conducting now assessments for ATR pilots ( captains and first officers ).
As usual you have to be patient with Air Mauritius....

Air Mauritius had the T & C 's and salary structures on their website a few months ago. For expat pilots. Apparently they removed the link.
Salary scales can still be found on www.ppjn.com...
