I can see the OPs point - you could get it signed...

I can see the OPs point - you could get it signed "in date" and do exactly the same flying as in your example no matter how long you left it beyond the second year, but the UK CAA are interpreting it...

Certainly as an instructor I was told I should not be signing unless it was priot to expiration. Should not really need any training if you are current.
