Multi Engine Hour Building

Would value opinions as to how to build multi engine CPL flight time?

Some recruiters typically look for...
Minimum of 1,500 hours of total documented flight time.
Minimum of 1,000 hours of fixed wing turboprop or turbofan time.

You could get your MEI. There are lots of opportunities if you have one. After you have some time with some piston multis, you are more likely to get your foot in the door with a place that flies turbo props.
