DVD to PC, Editing, and Back to DVD

I have done a pprune search on this, and a google search. As ever, I am confused.

I have transferred all the video 8 and DV Mini files on to a Hard drive on a Pana PVR. (Many hours from 25+ years).
I intend to put them on to DVDs.
I then want to Load the DVD contents on to my pc, and do some "simple" editing - mainly of the cut and paste sort.
(I will also back these up).
These are family videos, and contain bits that various relatives and friends have expressed strong interest in having. So what I want to do is to be able to "cut and paste", say, 10 minutes from 1 dvd and 20 mins from another one, and then rip that on to a dvd.

I DO NOT want to get in to mucking about with pixels, colours and etc.

Can anyone recommend the "best" or easiest software for taking the dvds on to the pc and then doing that sort of simple editing?
Do I have to break up the dvd content in to much smaller pieces to do my cutting and pasting?
pcadvisor UK recommends Handbrake. Anyone familiar with this?

Handbrake is free and flexible. It's an encoder more than an editor. However, since you say "PC" then I guess you're running Windows, in which case Microsoft's own (free) Movie Maker may be all that you need. If it's not already on your system (depends on your OS) it's a free download.

Thanks. I'll have a look at that. My pc is a Win 7 with I5 2 series, 8gb, and a big hard drive, so I think it will cope.
