With an A320 operating to maximum range with maximum possible load, what is the best/maximum cruising level in the first coupple of hours of flight..........for example, on a flight from Helsinki to Tenerife with MTOW departure, what is the optimum/maximum levels for the aircraft at it passes abeam say Amsterdam?

If I may also be so bold as to ask what the likely climb rates above FL300 would be for such a flight asuming econ mode?

about the climb rates: on the A320 (and on all Airbusses as far I know) the climbrate really sinks to an absolute minimum once above say FL270, you'll get something about 1000-1500 around FL300, wich is very slow climbing, but wich is also very economic!

As a general rule up to ISA + 15;

Optimum Flight Level = 570 - 3 x Gross Weight (tonnes)

Maximum Flight Level = OPT FL + 15

eg OPT FL for a GW of 75t = 570 - 225 = FL345

MAX FL for above example = FL345 + 15 = FL360

Hope this helps.
