Does anyone know if it is possible to apply to an airline (through CTC or OAA) and then defer my starting date should I get accepted? I won't finish university until June/July 2014 but wondered if it's best to start applying now?

No, it's not possible to do that. Take a look at the FAQs, question N° 7 easyJet MPL First Officer Programme | Oxford Aviation Academy - OAA.com (http://www.oaa.com/pages/schemes/easyjet#FAQs)
It's the same for CTC and all the other airline schemes.

It actually depends on the programme, I know for Qatar wings, CTC give you a maximum 6 month period to start.

You're too late for the British Airways FPP scheme this year, but had you applied back in November 2013 before it closed, you would have been fine because the first cadets to start once the selection process is finished will be on September 2014 courses. Note that this is not a deferred start, it is simply a long and slow process that would have dovetailed nicely with your Uni completion date.
