After i complete my training with an ATPL and Flight Instructor licence just wondering what other flying jobs there are apart from commercial and flight instructing?

Military (Save the money) is another option, but cough up 10-15 years service. Plenty of guys get PPL/CPL then join, although there's no RPL, so you are starting again from straight & level.

You won't have an ATPL when you finish your training. You'll have a CPL (and probably an instrument rating, ATPL theory exams passed and, judging from the location in your profile, completed an MCC course. If you're doing an Oz licence then forget the MCC).

In Oz, a fresh CPL typically gets you into the captain's seat for Aerial Work and Charter operations. Aerial work can be things like fish spotting, survey and the like (also agricultural work but that requires additional ratings). Charter is like Public Transport in the UK. Charter work for a fresh CPL tends to be in the outback, flying in & out of remote communities or flying tourists around.

In the UK a fresh CPL won't let you be PIC for public transport due the 700 hr min. experience requirement.
