Am I correct in thinking that if I fly from the UK to the USA, changing planes in Ireland, then we go through US immigration in Ireland and therefore arrive in a domestic arrivals hall in JFK?

If your flight is one which clears immigration and customs in Ireland then you will arrive as a domestic passenger, yes. If not then you will arrive in the US as a normal international passenger and will have to clear immigration and customs at JFK.

The Aer Lingus website, for example, states that only flights departing Ireland before 16:00 are eligible for pre-clearance. Not sure if that is only relating to EI flights or all flights, though.

Yes - I should have checked the Aer Lingus website first. Certain flights go through US immigration in Dublin, which is quite handy as I bet immigration queues at JFK can be long.

You could always fly with BA from London City to to JFK and clear immigration at Shannon. Not the cheapest I grant as it's an all business class flight.
