Can anyone help with accommodation in Paris that is of a high standard and gives crew discounts, close to a Metro is a must and not too far from the centre of the city as well.

FYI: virtually all Le Meridien (now part of Starwood group) will offer 50% off rack rate to crew, subject to availability. Hiltons are good too.
