I regularly travel to and around Europe and I'd like to know where I could fly N reg. aircrafts with a FAA instructor

Why N Reg? In the UK you can fly G reg on your Canadian licence, gives you a bit more choice, other countries may require a licence validation.

I am US PP/IFR and CAN PP. I'd like to practice some IFR approaches to stay current. hopefully next year: Can IFR...All I need is time.

you can fly any aircraft, does not need to be n registered. Also you can do it with any safety pilot (any license and any country) if you want to stay current ifr.
I give faa instruction in any aircraft anywhere in the world, but now I am not in UK.

If you anywhere in the north part of france, I mean anywhere north of paris, or even a little south, I can find you an airplane and i can give you instruction or be your safety pilot.
