When is the favoured time throughout the year that airliners look to recruit people to go through sponsorship with them? also being 23 now, would i stand much chance of getting accepted due to my age?

Your age is fine..As for time, they pop up any time. Recently ie last few months there have been a fair few.
Side note: They aren't actually "real" sponsorships, more you pay and your are tagged to that airline.
