What are the requirements for converting to a Canadian license from a US one and how would one go about doing this. I know there have been posts about this topic in the past, I am just itching to fly up north!!

And we're all itching to fly down south! LOL!

Try Transport Canada website. I'm not sure if the FAA would have anything on it, but Transport Canada should

First get the certificate of proficiency radio. You have to do the witten test for commercial.
Few hours just to get standard dual instructed hours .(make sure you have the required dual "instructed" hours with a TC )
Flight test for the commercial. Multi flight test . Written test for IFR followed by the IFR flight test(has to be in a multi).(of course depending on your experience you may have to take a few hours with an instructor).
For what it's worth : I would check job opportunity before getting into a licence conversion who might cost a few precious bucks.
Canada ,right now ,is not really a "land of opportunity" aviation speaking.
Anyway best of luck...
