Surprised they aren't basing one at Manchester for the Orlando flights. They seem to be using a 787-9 on a fairly large number of European short haul flights every week from Gatwick, throughout this summer. This seems a bit of a waste for a highly efficient long haul aircraft. I am sure their operations team are far more capable than myself at utilising their fleet, I was just a little surprised not to see the second example at Manchester and dedicated to long haul duties.
According to flightmapper both 789 will operate out of Gatwick on long haul except on a Sat when 1 will operate 4600 to PMI and 4660 to RHO. It looks currently like Gatwick will also have 3 x 788 and Man will have 3 x 788 and 2 x 763. Birmingham look like having a 788 also. That leaves the other 2 x 788 to cover the other long haul departures from the other airports.

The other two could be the short-haul configured Dreamliners (probably either both at LGW or one at LGW and one at MAN).

Whats the difference between the long and short haul configured 787s? Is it the lack of a Premium cabin or are there other differences?

As far as I'm aware the whole aircraft is configured in 3-3-3 just like the Economy section on the long-haul ones, with no Premium offering.

Having said that, several short-haul flights have been operated by long-haul configured 787s in the past (e.g. G-TUIJ last year and G-TUII the year before).

3-3-3 throughout. Front cabin sold as extra legroom. Extra legroom seats from rear cabin
removed and another row of seats put in instead.

Short haul has no premium set up. Fitted out for 325 economy seats.

Both S/haul 788's in my listings at LGW and MAN. The 2 spare L/haul will operate the flights out of Glasgow, East Midlands, Newcastle, Edinburgh, Bristol,Stanstead and Dublin as required. Also the days when MAN req extra a/f.

Thank you so much that provides great clarity.

Thanks. I wasn't sure if they still had the seat-back IFE when in short-haul configuration.

They do, (or they have done) but it's limited.

Is this definitely going to be TOM metal, or could it just be a Sunwing lease operating on behalf of TOM?

It's probably too early to say, could be either.

No they are not. This route was operated on behalf of Thomson Cruises with their 'Celebration' ship based in Dubai for the winter 16/17 season. They will not be returning during the winter 17/18 season.
