Not all ATA chapters are possible per aircraft group. For example b1.1 will not have ata 13 but b1.3 will not have ata 57. But yes you should have something for each applicable ata as the surveyor will use a check sheet with all ATA chapters on it.
Some chapters of your logbook will be naturally lighter than others dependant on your work. As a target you should aim for a broad cross section of work inclusive of troubleshooting/fault diagnosis, inspections, removal/refit, testing, MEL/CDL dispatch (if applicable), wiring, repairs.
The typical tasks section is a good reference but break each job down for example if you change a light assembly how did you diagnose it and test the rectification.
You can apply for the basic licence without a type rating if you like, you do not need a type rating in conjunction but in time you will require a type rating anyway to gain an approval.
