I did a course called Aeronautical Mathematics which was run by Dr Steve Holding. He's an awesome bloke and knows his stuff. It got me the tick in the box that I needed as I was in the exact same boat as you. It's run at the University of Queensland a few times a year and its a 4 week 9-5 live in course. You can do it by correspondence but its not recommended. Give it a look.
