The airport will ask for a business plan with full financials from any prospective tenant and then work out a formula based upon turnover to determine the rent. They will insist upon a minimum rent and a share of your turnover above a certain limit. Where more than one tenant expresses interest they will ask for sealed envelopes stating the minimum rent the tenant is prepared to pay.
